Whoopie pies have a fascinating history that not many people are aware of. While they are commonly associated with the Amish community and New England, their origins can be traced back to the Pennsylvania Dutch tradition. Legend has it that whoopie pies were initially made from leftover cake batter, with the soft, cake-like cookies being sandwiched together with a sweet filling. This delightful treat became known as a "whoopie pie" due to the joyful exclamation of those who discovered it!

David has early memories of baking with his Italian grandmother. He recalls how she could whip up a batch of vanilla cupcakes in a flash, and how fascinated he was by the transformation of liquids and pastes and powders into something entirely new - like a science lab! As for his baking tips, David suggests swapping in a portion of fresh grated ginger when a recipe calls for dried powdered ginger - it will add a slightly different depth of flavor and a bit more punch!
